Veggie Loaf
The chickpeas and veggies give this loaf a great texture. Try experimenting with other types of beans to find your perfect combination. This dish is rich in flavor and full of veggies and fiber.

Ingredients
- 1 Veggie Burger Starter Pack
- 15-ounce can chickpeas, rinsed and drained
- 1 cup boiling water
- 2 cups frozen peas and carrots, thawed
- 1 onion, diced
- 2 celery stalks, diced
- ¾ cup of your favorite BBQ Sauce.
Directions
- Preheat oven to 375°F. Line a 8" x 4" x 2½" loaf pan with parchment paper.
- In a medium-sized mixing bowl, roughly smash the chickpeas with a fork. Add the contents of the Veggie Burger Starter Pack, boiling water, and remaining ingredients, except the BBQ sauce, and thoroughly combine. Let the mixture stand for 10 minutes.
- Spoon the loaf mixture into the prepared loaf pan and even out the mixture with a spatula. Pour the BBQ sauce over the top of the loaf and bake for 30-35 minutes, or until the glaze is caramelized and the loaf is solid.
- Let the loaf stand for 15 minutes, and then lift the loaf out of the loaf pan using the parchment. Slice and serve.
Hints
- Break up the leftovers and form them into small meatballs. Bake them in the oven and serve with your favorite pasta sauce.
- Slice leftovers and use in sandwiches or wraps
