Curried Ramen Bowls
Asian ramen bowls are light, healthy, exotic, and so simple to make! You don’t need to head to a restaurant to experience a good ramen bowl because this one is loaded with unique flavors and plenty of fresh veggies.

Ingredients
- 1 Curry Starter Pack
- 8-10 ounce dry rice (not fried) ramen noodles (Lotus Food brand is gluten-free and oil-free)
- 3 cups water
- 1 cup lite coconut milk
- 2 teaspoons ginger paste
- ½ to 1 teaspoon Sriracha, or to taste (Sriracha adds spice)
- ¾ teaspoon salt, or to taste
Topping ideas
- scallions
- bean sprouts
- sliced cabbage
- shredded carrots
- baked tofu
Directions
- Cook the ramen noodles according to package instructions, then rinse in cool water, drain, and set aside.
- Place the water and Curry Starter Pack into a high-speed blender and blend until smooth and creamy. Place the curry sauce and remaining broth ingredients into a pot and bring to a light boil. Reduce heat to low and simmer for 5-10 minutes.
- Place noodles into serving bowls and ladle curried broth over the noodles and top with your favorite vegetable toppings.
Hint
- Add kimchi for extra spice and flavor.
