Carrot Cake Loaf
This isn’t your grandma’s carrot cake loaf – but she’d definitely ask for the recipe. Packed with freshly shredded carrots, warm spices, and real whole ingredients, this moist and flavorful loaf skips the oil and leans into nature’s best. Top this loaf with a dreamy cashew-based “cream cheese” icing and now you have a spoon-licking delight that’s simply irresistible.

Ingredients
Dry Ingredients
- 1 1/2 cup white whole wheat flour
- 2 tablespoons cornstarch
- 2 teaspoons baking soda
- 3 teaspoons pumpkin pie spice
Wet Ingredients
- 1/4 cup unsweetened soy milk
- 1/2 cup maple syrup
- 1 cup unsweetened applesauce
- 2 tablespoons molasses
- 1 tablespoon apple cider vinegar
- 1 teaspoon pure vanilla extract
Additional Ingredients
- 2 cups shredded carrots
- 1/2 cup chopped walnuts
Cashew "Cream Cheese"
- 1 cup raw cashews
- 1/2 cup unsweetened soy milk
- 2 tablespoons maple syrup
- 2 tablespoons lemon juice
- 2 teaspoons vanilla
- 1/8 teaspoon salt
Directions
1. Preheat oven to 350°F. Line a bread loaf pan with parchment paper. Set aside.
2. In a large mixing bowl, add the dry ingredients and whisk well to incorporate the spices and baking soda well.
3. In a small mixing bowl, add the wet ingredients and whisk until well combined.
4. Pour the wet ingredients into the dry ingredients. Add the carrots and walnuts at this point. Using a spatula, gently fold in and incorporate all of the ingredients until there is no more flour visible. Be careful not to overmix as this will lead to a tougher bread consistency. The batter will be thick and smooth.
5. Pour the batter into the lined bread pan and bake for 50-60 minutes or until toothpick inserted in the center comes out clean. Allow the cake to cool for 15 minutes before slicing. If you are frosting the bread, I recommend you wait for 1-2 hours or until the loaf is completely cool.
6. Place the “Cream Cheese” Icing ingredients into a high-speed blender and blend until smooth and creamy. Spread the icing over the top of the fully cooled loaf and top with walnuts, carrots, and cinnamon if desired.
