Game Day Appetizers

Spinach Artichoke Dip: This cheesy dip makes the perfect party dish. We use it for toasted cheese sandwich filling or as a topping for baked potatoes or pasta with grilled veggies. The combinations are never ending.
Zucchini Poppers: These little gems make flavorful and healthy appetizers. Zucchini doesn't have a lot of flavor alone, but they absorb added flavors beautifully. These particular appetizers have a mild cheesy flavor that both kids and adults love. Eat them alone or in a sandwich, bun, wrap, sub, or sauce.

Spinach Artichoke Dip
Sauce
- ½ cup raw cashews
- 1 ½ cup plant based milk
- 1 tablespoon miso paste
- 5 tablespoons tapioca starch (tapioca flour) No Substitutions Here!
- 2 tablespoons nutritional yeast flakes
- ½ teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon lemon juice
- ¼ teaspoon sea salt (or to taste)
Vegetable Filling
- 1-14 ounce can artichoke hearts drained, rinsed, and chopped
- ½ cup red onion, finely diced
- 4 cloves garlic, minced
- 2 cups chopped fresh spinach
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Zucchini Poppers
- 4 cups shredded zucchini (2-3 medium zucchini)
- 1 onion, shredded
- 2 tablespoons cornstarch
- 1/2 cup nutritional yeast flakes
- 1 tablespoon tahini
- 1 tablespoon white miso paste
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 teaspoon sea salt or to taste
- 1 cup whole wheat breadcrumbs (or gluten free breadcrumbs)
Spinach Artichoke Dip Directions
- Preheat oven to 400 degrees.
- Place the cheese mixture into a high powered blender and blend until smooth and creamy.
- In a saucepan, whisk the cheese mixture over medium heat until thick and bubbly. It will appear to get lumpy but if you are patient, it will become evenly thickened and stretchy. That is the unique part of tapioca starch, it creates a thick and stretchy consistency! It should take about 5 minutes to cook.
- Fold the vegetable filling mixture into the cheese sauce until the ingredients are completely combined. Place the ingredients into an oven safe 8 x 8 inch baking dish and broil for 2-3 minutes or until the top of the cheese mixture is golden brown. Serve with bread, chips, or veggies.
Zucchini Popper Directions
- Preheat oven to 400°F.
- Grate the zucchini and squeeze out any excess water using a clean dishtowel.
- In a medium bowl, combine the zucchini and grated onion with the remaining ingredients and mix until well combined. I like to combine the mixture with my hands to incorporate everything evenly.
- Roll 1-2 tablespoons of the mixture into small cylinders and place onto a parchment lined baking sheet. Bake for 15-18 minutes until golden brown, crispy, and dry to the touch.
