Raspberry Jam Bars
I love date bars and wanted to recreate them using berries. These bars are delicious and easy to make. They're like breakfast in a cookie!

Ingredients
Fruit Filling
- 2 cups frozen rasberries (10 oz frozen)
- 3 tablespoons maple syrup
- 3 tablespoons chia seeds
- 1 teaspoon vanilla extract
Crumble Mixture
- 2 cups oats
- 1/2 cup walnuts
- ½ cup pitted dates
- ¼ cup coconut sugar
- 1/4 cup unsweetened applesauce
- ¼ cup water
- ½ teaspoon ground cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- ¼ cup walnuts, chopped
Directions

Preheat oven to 400°F. Line a 9-inch square baking pan with parchment paper.
- In a saucepan, cook the raspberries, maple syrup, and vanilla over medium heat. When mixture begins to cook down and thicken, stir in the chia seeds. Take the mixture off the heat and set aside to thicken.
- In a food processor, blend the oats, walnuts, and dates until a crumbly and slightly moist mixture forms. Add the applesauce, water, cinnamon, baking soda, and sea salt. Pulse until a thick, crumbly dough forms.
- Firmly press half the of oatmeal mixture into the prepared pan. Use a spatula to spread the thickened raspberry mixture evenly over the crumble mixture. Top with the remaining oat mixture and press lightly.
- Bake until golden brown, 25-30 minutes. Cool thoroughly and cut into bars.
