Curried Samosa Potatoes

Potatoes, cauliflower, and peas are combined with the perfect blend of curry spices. Anyone who loves Indian food or adventurous potato dishes will love this recipe.

Ingredients

  • 1 Coconut Curry Starter Pack
  • 1¼ lite coconut milk
  • 1 pound potatoes, medium diced, or 3 cups precooked potatoes (Simply Potatoes®)
  • 2 cups roughly chopped cauliflower
  • 1 cup green peas
  • ¾ teaspoon salt or to taste
  • ¼ cup chopped cilantro
  • 1 cup unsweetened plant-based yogurt (optional)

    Directions

    1. In a high-speed blender, add the Coconut Curry Starter Pack and coconut milk and blend until smooth and creamy. Set aside.
    2. In a large skillet, cover the diced potatoes with water and cook over medium heat until the potatoes are fork-tender, but not mushy, about 10-15 minutes.  If you are using pre-cooked potatoes, you can reduce the cook time to 3-5 minutes.  Add the cauliflower and continue to cook until the cauliflower is soft.  
    3. Drain and smash the potatoes and cauliflower gently so they are still chunky. Then add green peas and the curry sauce to the potatoes and cauliflower and gently stir to combine. Serve warm and top with plant-based yogurt and cilantro.  

    Hints

    • Wrap the potato filling into a whole grain wrap and top with sprouts for a samosa/burrito
